The dough is meticulously pressed through bronze cylinders one hundred times, which gives a delicate texture. It is air dried at a low temperature for 16 hours. Tagliardi are the Cipriani interpretation of the maltagliati, a typical pasta shape found in the Emilia-Romagna region of Italy. They come in squares of about 1 inch by 1.
