Volpi Pancetta is an authentic version of this Italian traditional cured meat. Pancetta is often referred to as Italian bacon. Unlike American bacon, which is most often smoked, pancetta is unsmoked pork belly that is cured in salt and spices. Pancetta adds a distinctive flavor to pasta and several other dishes. Experiment with using Volpi Pancetta in carbonara, Bucatini all'Amatriciana, and on pizza.
